Lavender Green Tea Manuka Syrup
Manuka Health partners with award-winning bartender Julia Momose (Kumiko, Chicago) to create a spirit-free drink using Manuka Health honey as a key ingredient

Ingredients

5 grams loose leaf Japanese green tea (I use premium organic sencha from Kyoto)

1 - 2 grams dried French lavender flowers

200 ml 175°F water

Manuka Health Honey

1/2 ounce Lavender Green Tea Manuka Syrup

2-4 ounces freshly whisked matcha (or other green tea)

Sparkling Water (to top) *also tasty with club soda or tonic water

Steep green tea and lavender flowers in the hot water for 2 minutes.

Strain, and weigh the liquid.

Divide that number in half and measure that amount of Manuka Health Honey into the tea (if there is 200 ml of tea, measure in 100 grams of Manuka honey).

Stir until the honey is fully dissolved. Use immediately or store in the refrigerator for a week.

Measure the Lavender Green Tea Manuka Syrup and cooled matcha (or other tea) into a glass.

Top off with sparkling water and stir gently to combine.
Lavender Manuka Matcha (hot)
Prepare matcha as you like and sweeten with a teaspoon or so of the syrup.
